Cheesy Taco Spaghetti Casserole

This Cheesy Taco Spaghetti Casserole is the perfect combination of two favorite dishes- spaghetti and tacos!

Ingredients
  

  • 1 lb 453g thin spaghetti noodles
  • 1 lb 453g lean ground beef
  • 1 packet taco seasoning
  • ¼ cup 59ml water
  • 1 can 15 oz/425g chili beans, undrained
  • 1 can 15 oz/425g tomato sauce
  • 8 oz 227g Velveeta cheese, cubed
  • 1 cup 113g shredded cheese
  • Chopped tomato & green onion for garnish

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius) and prepare a 9×13 inch (23x33cm) baking dish by spraying it with cooking spray.
  • Cook the ground beef over medium-high heat in a skillet until it’s no longer pink. Drain the beef and return it to the pan.
  • Add the taco seasoning and water to the beef and stir everything together until well combined.
  • Add the undrained chili beans, tomato sauce, and cubed Velveeta cheese to the beef mixture. Stir everything together and let it simmer over low heat while you cook the pasta.
  • Cook the spaghetti according to package instructions. Remember to salt your water for added flavor!
  • Drain the pasta and add it to the taco beef mixture. Stir everything together and pour it into the prepared baking dish.
  • Top the casserole with shredded cheese and bake for 20 minutes until bubbly and golden brown.
  • Garnish with chopped tomato and green onion before serving. Enjoy!

Notes

You can add your favorite toppings such as sour cream, avocado, or jalapenos for an extra burst of flavor. You can also substitute the ground beef with ground turkey or chicken for a healthier alternative. This casserole can be made ahead of time and stored in the fridge or freezer for later use.
