  • 1 9-inch pie shell
  • 5 large tomatoes peeled and sliced
  • 4 slices of bacon cooked and crumbled
  • 1 sweet onion thinly sliced or chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons milk
  • 1/2 cup mayonnaise
  • 1 1/2 cups sharp cheddar cheese shredded
  • 1/4 cup crushed Ritz crackers
  • 2 teaspoons melted butter
  • 2 green onions scallions, thinly sliced
  • Pie shell: 1 9-inch
  • Tomatoes: 5 large approximately 2.2 lb or 1000 g
  • Bacon: 4 slices approximately 4 oz or 113 g
  • Sweet onion: 1 approximately 8 oz or 227 g
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Milk: 2 tablespoons
  • Mayonnaise: 1/2 cup
  • Sharp cheddar cheese: 1 1/2 cups approximately 6 oz or 170 g, shredded
  • Ritz crackers: 1/4 cup approximately 1.4 oz or 40 g, crushed
  • Butter: 2 teaspoons melted
  • Green onions scallions: 2, thinly sliced

Instructions
 

  • Preheat your oven to 350°F (175°C). Prick the bottom of the pie shell with a fork and bake it for around 10 minutes until it turns lightly golden. Set it aside.
  • In a skillet, cook the bacon until it becomes crispy. Remove it from the skillet, drain it on paper towels, and crumble it into small pieces. Set it aside.
  • Arrange a layer of sliced tomatoes to cover the bottom of the partially baked pie shell. Sprinkle the chopped onion, salt, and pepper over the tomatoes.
  • Create another layer of sliced tomatoes and season it with salt and pepper.
  • In a bowl, combine the mayonnaise, crumbled bacon, shredded cheddar cheese, and milk. Spoon the mixture over the tomatoes, ensuring it spreads evenly to cover them.
  • In a separate bowl, mix the crushed Ritz crackers and melted butter until well combined. Sprinkle this mixture over the top of the pie.
  • Bake the pie in the preheated oven for approximately 30 minutes or until the filling is bubbly, and the crust turns golden brown.
  • Remove the pie from the oven and sprinkle the sliced green onions (scallions) over the top as a fresh garnish.
