Ingredients
  

  • Large shrimp 1 lb. / 450 grams, peeled and deveined
  • Kosher salt and fresh cracked black pepper to taste
  • Cajun seasoning 2 teaspoons
  • Dried oregano 1/2 teaspoon
  • Olive oil 2 tablespoons / 30 ml
  • Andouille sausage or smoked sausage 6 oz. / 170 grams, thinly sliced
  • Fettuccine pasta 10 ounces / 283 grams
  • Yellow onion 1/2, thinly sliced
  • Red bell pepper 1, thinly sliced
  • Cajun seasoning 4 teaspoons
  • Brown sugar 1 teaspoon
  • Garlic cloves 2-3, chopped
  • Crushed tomatoes 1/2 cup / 120 ml
  • Chicken broth sodium-free (1 cup / 240 ml)
  • Heavy cream 1 cup / 240 ml
  • Grated Parmesan 2/3 cup / 67 grams
  • Parsley 1 tablespoon, chopped

Instructions
 

  • Toss shrimp with salt, pepper, Cajun seasoning, and oregano. Cook in a large skillet with olive oil for 2-3 minutes. Set aside.
  • In the same pan, brown sliced sausage; set aside.
  • Cook pasta in salted boiling water until al dente; drain.
  • Lower heat, add more olive oil to the pan. Sauté onion, bell pepper, Cajun seasoning, brown sugar, and a pinch of salt until softened.
  • Add garlic, cook for 30 seconds. Stir in crushed tomatoes, chicken broth, and heavy cream. Simmer for a couple of minutes.
  • Add Parmesan, stir until blended. Add cooked pasta and sausage, heat through (2-3 minutes). Salt and pepper to taste.
  • Finally, add the shrimp. Serve sprinkled with chopped parsley.
