Mix ground beef and taco seasoning until it is browned. Drain the beef and place in a bowl.
Toss tortillas in a skillet or flat plate until they are crispy and lightly brown.
Layer one tortilla, refried beans and cheese on a nonstick baking sheet or pizza stone.
Add another tortilla.
Spread 3-4 Tablespoons of enchilada sauce over the tortilla. Leave about 1/2" around the edges.
Add cheese to the top, leaving a 1/2" border around the edge of your tortilla.
Broil for 2 minutes. Turn the pan halfway through.
Allow to cool in the oven before adding chopped tomatoes, cilantro, sour cream, and then removing from the oven.
