Copycat Mexican Pizza Recipe

Ingredients
  

  • 1 pound ground beef cooked and drained
  • 1/2 packet taco seasoning based on 1oz packet
  • 4 large flour tortillas
  • 1 cup refried beans
  • 1 cup Old El Paso Shredded Cheese Mexican Taco Blend
  • 1 cup red enchilada sauce
  • 1/2 cup tomatoes chopped
  • Cilantro & sour cream for garnish

Method
 

  1. Mix ground beef and taco seasoning until it is browned. Drain the beef and place in a bowl.
  2. Toss tortillas in a skillet or flat plate until they are crispy and lightly brown.
  3. Layer one tortilla, refried beans and cheese on a nonstick baking sheet or pizza stone.
  4. Add another tortilla.
  5. Spread 3-4 Tablespoons of enchilada sauce over the tortilla. Leave about 1/2" around the edges.
  6. Add cheese to the top, leaving a 1/2" border around the edge of your tortilla.
  7. Broil for 2 minutes. Turn the pan halfway through.
  8. Allow to cool in the oven before adding chopped tomatoes, cilantro, sour cream, and then removing from the oven.
