Method
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a large bowl, cream the butter and cream cheese with an electric mixer until smooth.
- Add the sugar and beat for 1 minute until light and fluffy.
- Add the egg and vanilla extract and mix until well combined.
- In three additions, add the baking powder, flour, and salt, mixing until just combined after each addition.
- Cover the dough and chill in the refrigerator for at least 1 hour.
- Once chilled, dust your hands with flour and roll the dough into 1-2 inch balls.
- Place the dough balls 2 inches apart on the prepared baking sheet and flatten gently with your fingers.
- Bake for 9-11 minutes, until the bottom of the cookies are golden brown while the top should remain pale.
- Transfer the cookies to a wire rack to cool, then dust with powdered sugar before serving.
Notes
These cookies can be stored in an airtight container at room temperature for up to 3 days. If you want to make them ahead of time, you can freeze the dough balls and bake them whenever you want to serve them. You can also experiment with different flavors by adding chocolate chips or nuts to the dough. Enjoy!
