Method
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- After grating the zucchini, transfer it to a clean towel and bundle up the towel to squeeze out any excess moisture.
- In a large bowl, mix together the squeezed zucchini, garlic, egg, breadcrumbs, parmesan cheese, chives, parsley, salt, and pepper until well combined.
- Scoop out tablespoon portions of the mixture and shape into balls, then place them on the prepared baking sheet.
- Bake for 15-18 minutes, or until golden brown.
- Serve hot with your favorite dipping sauce and enjoy!
Notes
You can substitute the fresh herbs with dried herbs if you don't have fresh ones on hand.
If the mixture is too wet, add more breadcrumbs to help bind it together.
