Ingredients
  

CAKE INGREDIENTS:
  • 256 grams 2 cups all-purpose flour
  • 400 grams 2 cups granulated sugar
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 33 grams 1/3 cup unsweetened cocoa powder
  • 240 mL 1 cup buttermilk (or 1 tablespoon vinegar + enough milk to make 1 cup, let sit for an hour)
  • 240 mL 1 cup vegetable oil
  • 240 mL 1 cup boiling water
  • 1 teaspoon vanilla extract
  • 2 large eggs
ICING INGREDIENTS:
  • 200 grams 1 cup granulated sugar
  • 2 tablespoons light corn syrup
  • 60 mL 1/4 cup milk
  • 2 tablespoons unsalted butter
  • 85 grams 1/2 cup semisweet chocolate chips
  • 1 teaspoon vanilla extract
  • miniature marshmallows
  • 40 grams 1/3 cup chopped nuts, optional

Method
 

  1. Preheat your oven to 175°C (350°F) and grease a 9x13-inch baking pan with cooking spray.
  2. In a mixing bowl, combine the flour, sugar, baking soda, salt, and cocoa powder. Whisk until well combined.
  3. Add the oil, boiling water, buttermilk, eggs, and vanilla extract. Beat until well mixed.
  4. Pour the batter into the prepared pan and spread it evenly.
  5. Bake for about 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  6. In a saucepan, combine the milk, butter, corn syrup, and sugar. Stir until well mixed and bring the mixture to a boil for at least 2 minutes.
  7. Add the chocolate chips, vanilla extract, and nuts (if using). Stir until the chocolate chips are melted.
