- Preheat the oven to 350°F (175°C) and grease a glass baking dish with cooking spray.
- Drizzle 2 tablespoons of olive oil over both sides of the pork chops.
- In a shallow bowl, combine the Parmesan cheese, bread crumbs, garlic powder, paprika, parsley, and pepper.
- Coat the pork chops with the mixture, pressing the coating onto the pork chops to make sure it adheres well.
- In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the pork chops to the skillet and cook for about 5 minutes per side or until golden brown.
- Transfer the pork chops to the prepared baking dish and bake for 25-30 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).
