Ingredients
  

  • 1 1/2 lb boneless chicken breast
  • 3 medium carrots peeled and diced
  • 3 stalks celery diced
  • 1 medium onion diced
  • Three cloves of garlic minced
  • 6 cups of low-sodium chicken broth
  • 1 cup water
  • 2 bay leaves
  • 1 teaspoon Italian seasoning or more to your taste
  • 2 cups cheese tortellini
  • If desired chop fresh parsley and serve
  • Salt and pepper to your liking

Method
 

  1. All ingredients except the tortellini should be added to a slow cooker.
  2. Cook on low for 6 hrs
  3. Take the cooked chicken out of the slow cooker. Shred it or cut it into cubes and then add it back to the slow cooker.
  4. Stir in the tortellini. Cook for about 15 minutes, or until the pasta is tender.
  5. Salt and pepper to your liking. If desired, discard bay leaves and add chopped parsley to the dish immediately.
