Ingredients
  

  • 1 lb. Large shrimp peeled, deveined
  • To taste kosher salt and freshly cracked black pepper
  • 1 teaspoon Cajun Seasoning or Creole Seasoning
  • 1/2 teaspoon dried Oregano
  • 2 tablespoons olive oil
  • 6 oz. andouille sausage smoked sausage (thinly cut)
  • 10 ounces fettuccine pasta
  • 1/2 Yellow Onion thinly sliced.
  • 1 red bell pepper thinly sliced
  • 4 teaspoons Cajun Seasoning or Creole Seasoning
  • 1 teaspoon brown Sugar
  • Chopped 2-3 cloves of garlic
  • 1/2 cup crushed tomatoes
  • 1 cup chicken broth sodium free
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan
  • 1 tbsp chopped parsley

Instructions
 

  • Mix shrimp with Cajun seasoning, salt, pepper and Oregano. Toss well. Place a large skillet on medium heat. Drizzle olive oil onto the bottom of the pan.
  • Cook shrimp for 2 minutes. Turn the shrimp over and cook for another minute. Transfer the shrimp to a plate, then set aside. Add the sausage to the pan and drizzle with olive oil. Brown it until golden brown, approximately 4 - 5 min. Transfer to a plate and set aside.
  • Cook the pasta in salted boiling water until it is al dente.
  • Reduce heat to medium, add a little more olive oil to pan, then add the onion, red pepper, Cajun seasonings, brown sugar and a generous pinch salt. Cook until the pepper and onion are softened slightly. Scrape up any brown bits. Cook the garlic until fragrant for about 30 seconds.
  • Add the crushed tomatoes, chicken broth, and heavy cream. Reduce heat to medium-low, stir occasionally, and simmer for a few minutes.
  • After the sauce has simmered, add Parmesan to the pot and stir. Once Parmesan has been incorporated, add the cooked pasta and sausage to the saucepan and stir. Heat for 2 - 3 min. Salt and pepper to your taste, then add the shrimp.
  • Serve with chopped parsley.
