Mix shrimp with Cajun seasoning, salt, pepper and Oregano. Toss well. Place a large skillet on medium heat. Drizzle olive oil onto the bottom of the pan.
Cook shrimp for 2 minutes. Turn the shrimp over and cook for another minute. Transfer the shrimp to a plate, then set aside. Add the sausage to the pan and drizzle with olive oil. Brown it until golden brown, approximately 4 - 5 min. Transfer to a plate and set aside.
Cook the pasta in salted boiling water until it is al dente.
Reduce heat to medium, add a little more olive oil to pan, then add the onion, red pepper, Cajun seasonings, brown sugar and a generous pinch salt. Cook until the pepper and onion are softened slightly. Scrape up any brown bits. Cook the garlic until fragrant for about 30 seconds.
Add the crushed tomatoes, chicken broth, and heavy cream. Reduce heat to medium-low, stir occasionally, and simmer for a few minutes.
After the sauce has simmered, add Parmesan to the pot and stir. Once Parmesan has been incorporated, add the cooked pasta and sausage to the saucepan and stir. Heat for 2 - 3 min. Salt and pepper to your taste, then add the shrimp.
Serve with chopped parsley.
