Ingredients:

1 pound ground beef
2 cups (370 g) long-grain white rice, uncooked
2 cans (10.5 ounces each) French onion soup
2 cans (10.5 ounces each) beef consomme
½ cup (1 stick / 113 g) unsalted butter, sliced into pats
chopped chives, for garnish (optional)

Directions:

  1. Preheat your oven to 425°F (220°C). Spray a 9×13-inch baking dish with nonstick cooking spray and set aside.
  2. In a medium skillet over medium heat, cook the ground beef until browned and no longer pink, approximately 8-10 minutes. Drain any excess grease.
  3. Transfer the cooked ground beef to the prepared baking dish. Add the uncooked rice, French onion soup, and beef consommé to the dish. Stir to combine.
  4. Arrange the pats of butter on top of the rice mixture.
  5. Cover the baking dish with aluminum foil and bake for 30 minutes.
  6. Remove the foil and continue baking, uncovered, for an additional 30 minutes or until the rice is cooked through and tender.
  7. Fluff the rice with a fork and garnish with chopped chives before serving.
