  • 1/2 cup low-carb pizza sauce or tomato sauce
  • 1 teaspoon dried oregano
  • 2 cups shredded mozzarella cheese (approx. 200g or 0.44 lb)
  • 1/4 cup grated parmesan cheese (approx. 25g or 0.055 lb)
  • Pizza toppings of your choice

Directions:

  1. Preheat your oven to 450°F (230°C) and line a baking pan with foil.
  2. Slice the zucchinis into 1/4-inch thick rounds and arrange them on the prepared baking sheet.
  3. Top each zucchini slice with pizza sauce, oregano, shredded mozzarella, parmesan cheese, and your favorite pizza toppings.
  4. Bake the zucchini pizza bites for 5 minutes or until the zucchini is tender.
  5. Turn on the broiler and broil for an additional 5 minutes or until the cheese is melted and bubbly.
  6. Remove the baking sheet from the oven and let the zucchini pizza bites cool for a few minutes before serving. Enjoy!
