Ingredients
  

  • 1 lb chicken breast cut into 1 inch pieces
  • 1 to 3 teaspoons cajun spice *
  • 2 tablespoons olive oils
  • 1/2 cup chopped yellow onion
  • 1 tablespoon minced garlic
  • 2 1/2 cups uncooked penne pasta
  • 2 cups chicken broth
  • 1/3 cup water
  • 1 small red bell pepper seed removed. Slice into thin strips
  • 1 small yellow bell pepper seed removed and cut into thin strips
  • 4 ounces cream cheese
  • 1/2 cup shredded block parmesan cheese

Reduce heat to low and cover the saucepan. Let it simmer for 22 minutes. Cover and continue cooking for 5 minutes more, or until liquid is almost absorbed. Stir in the cream cheese and Parmesan cheese. Stir until cheese melts. Serve immediately with fresh parsley.
