Heat olive oil on medium heat in a 12-inch skillet or pan. Stir in onions until they are softened, approximately 3 minutes. Cook the chicken in the pan until golden brown. Add garlic to the pan and cook for one more minute. Uncooked pasta, chicken broth and water are added. Sliced peppers can be added as well as the rest of Cajun seasoning. Bring to boil. Stir. Reduce heat to low and cover the saucepan. Let it simmer for 22 minutes. Cover and continue cooking for 5 minutes more, or until liquid is almost absorbed. Stir in the cream cheese and Parmesan cheese. Stir until cheese melts. Serve immediately with fresh parsley.
