- 1 Tablespoon oil
- 1/2 onion chopped
- 1 green bell pepper chopped
- 2 cloves garlic minced
- 1 lb ground beef
- Salt and pepper to your taste
- 3 Tablespoons taco Seasoning either 1 packet from a store or homemade.
- 1-1/2 cups red salsa
- 2 Tablespoons tomato paste
- 1 cup corn drained
- 1 16-ounces can black beans, drained
- 1 can 4 ounces green chilies
- 1 cup long-grain white rice uncooked.
- 2 cups beef stock
- 2 cups Mexican Blend Cheese Cheddar or Monterrey Jack
Cook the bell pepper and chopped onion in olive oil in a large skillet on medium heat for 5 minutes, or until softened.
Mix the minced garlic in a saucepan and heat for approximately 1 minute, stirring occasionally to keep it from burning.
Cook the ground beef for 5 more minutes. Drain any extra grease after the ground beef has been cooked.
Mix the taco seasoning with the ground beef. Stir until it is coated.
Once the ground beef has been seasoned and cooked, you can add the salsa, tomato paste and green chilies to the mixture and stir until everything is evenly distributed.
Add the uncooked rice to the beef broth.
Cover the rice mixture and bring it to a boil. After that, reduce heat to low and let simmer for 18 minutes.
Sprinkle Mexican cheese over the casserole. Allow the cheese to melt for 3 to 5 minutes.
Serve with green onions, chopped tomatoes, and cilantro. Serve immediately
