Ingredients
  

  • 1 tablespoon olive oil
  • 6 boneless skinless chicken breasts or thighs (each 4 to 6 ounces)
  • 4 bell peppers (sliced
  • 1 small onion sliced.
  • 1 package or 1 recipe fajita seasoning mixture
  • 1 cup sour cream
  • 4 ounces cream cheese softened
  • 2 cups grated cheddar cheese
  • Optional for serving: Avocado guacamole and sour cream.

Instructions
 

  • Preheat oven to 350°F
  • Sauté the chicken in olive oils on medium heat until it is cooked. Set aside the skillet.
  • Sauté onions and peppers until tender.
  • Stir in the chicken and return it to the pan. Mix thoroughly.
  • Sprinkle cheese on top and bake in the oven for 20 minutes, or until cheese bubbles.
