- Ground beef 1 pound 85/15
- 1 medium onion chopped
- 1 green bell pepper chopped
- 1 can Mexican-style or Chili-style Stewed Tomatoes undrained (14.5 ounces).
- 1/2 cup water
- 2 tablespoons Homemade Taco seasoning or 1 packet taco seasoning mix
- 2 cups elbow macaroni or small shells
- 2 cups cheddar cheese shredded, divided
Allow the pasta to cook for two minutes less than the instructions on the packet. Drain the pasta and allow it to cool.
Cook ground beef, onion and green pepper in a large skillet on medium heat for 5 minutes or until the beef is no longer pink. Drain.
Add tomatoes, water, and taco seasoning. Let simmer for 10 minutes, stirring occasionally.
Mix pasta in a pot. Stir well and cook for 2 minutes.
Mix in the cheese and stir to combine.
