Each breast should be cut in half.
Mix egg and water together in a small bowl until well blended.
Mix together garlic, salt, and pepper.
Place the parmesan in a shallow bowl.
Dip each piece in the egg mixture, making sure it is coated.
Let excess eggs drip off.
Sprinkle with parmesan. Sprinkle more parmesan over top. Gently press the top, then turn over and do the same on the other side. Take out excess. Continue with the remaining chicken.
Butter and oil should be placed in a large skillet on medium-high heat.
Place the chicken on a plate and keep it there until the edges are browned.
Use a spatula to lightly press the dough. Turn over and continue pressing until it is browned.
Use a spatula to gently press the mixture and transfer it to a serving platter.
