One Pot Cajun Chicken Alfredo

One pot meals are the best, especially when they’re as flavorful as this cajun chicken alfredo! This dish is rich and creamy, with just the right amount of spice. It’s also super easy to make, and can be on the table in less than an hour.

Ingredients
  

  • 4 tablespoons olive oils
  • Cut 1 lb chicken into bite-sized pieces
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper for a delicious taste
  • 14 oz smoked sausage cut diagonally
  • 4 cloves garlic minced
  • 1 quart of low-sodium chicken soup
  • 2 1/2 cups heavy cream
  • 1 pound penne pasta uncooked
  • 1 1/2 teaspoons Cajun seasoning.
  • Freshly shredded 4 Oz Parmesan Cheese More as Needed
  • Italian Parsley garnish

Instructions
 

  • Begin with a large saucepan that has a lid.
  • Season the chicken with salt, pepper, and cook in olive oil on medium heat.
  • Continue to cook the sausage until it is lightly browned.
  • Add garlic to the mixture and cook for approximately two minutes.
  • To the pot, add chicken broth, heavy cream and dried pasta. Season with cajun seasoning.
  • Mix all ingredients together, and bring to a boil over medium heat.
  • Reduce heat to medium and cover the pan for 15-20 minutes or until pasta is tender.
  • Slowly stir in the parmesan cheese.
  • Mix in chopped parsley. Season with cajun seasoning.
