Preheat oven at 375°F. Set aside aluminum foil or parchment paper on a rimmed baking tray. Use paper towels to dry the loin of pork.
Combine the paprika and garlic powder with the onion powder. Add salt, pepper, and rosemary to a small bowl.
Spray pork loin lightly with cooking spray. This will make it easier to stick the spice mixture.
Rub the spice mixture all over the pork loin.
Place pork loin in olive oil on medium heat. Cook until golden brown, about 3 to 5 min per side. Place the pork loin on a previously prepared baking sheet fat-layer side down.
Combine the honey, mustard, soy sauce and oil in a bowl. Stir until combined. If the sauce becomes too thick, you can add more oil or soya sauce. Save 2 tablespoons of sauce for your vegetables.
Rest of the honey mixture can be brushed over the pork loin. Bake for 25 minutes.
Toss the vegetables in a tablespoon olive oil and the remaining honey mixture. Take the pork roast out of oven. Add the vegetables in one layer.
Place a piece foil on top of the pork to keep it from burning. Place the pork loin back in the oven. Continue to cook for another 25-30 minutes or until the internal temperature reaches 145@F. To check doneness, use an Instant Read Thermometer. Halfway through cooking, stir vegetables.
Take out baking sheet and cover vegetables and meat with foil. Let rest for 10 minutes. Slice the pork and serve it with vegetables.
