One pot cajun chicken pasta

Ingredients
  

  • 1 lb chicken breast cut into 1 inch pieces
  • 1 to 3 teaspoons cajun spice *
  • 2 tablespoons olive oils
  • 1/2 cup chopped yellow onion
  • 1 tablespoon minced garlic
  • 2 1/2 cups uncooked penne pasta
  • 2 cups chicken broth
  • 1/3 cup water
  • 1 small red bell pepper seed removed. Slice into thin strips
  • 1 small yellow bell pepper seed removed and cut into thin strips
  • 4 ounces cream cheese
  • 1/2 cup shredded block parmesan cheese
  • Freshly chopped parsley to garnish

Instructions
 

  • Season chicken with 1 teaspoon Cajun seasoning.
  • Heat olive oil on medium heat in a 12-inch skillet or pan. Stir in onions until they are softened, approximately 3 minutes. Cook the chicken in the pan until golden brown. Add garlic to the pan and cook for one more minute. Uncooked pasta, chicken broth and water are added. Sliced peppers can be added as well as the rest of Cajun seasoning. Bring to boil. Stir. Reduce heat to low and cover the saucepan. Let it simmer for 22 minutes. Cover and continue cooking for 5 minutes more, or until liquid is almost absorbed. Stir in the cream cheese and Parmesan cheese. Stir until cheese melts. Serve immediately with fresh parsley.
