FLUFFY CHOCOLATE CHIP MUFFINS

Ingredients
  

Dry ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp all-purpose flour
  • 3 Tbsp baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet ingredients:

  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1/4 cup unsalted butter melted and slightly cooled
  • 1 tsp vanilla extract

Other:

  • 1 cup semisweet chocolate chips
  • Optional: Turbinado/raw Sugar for topping

Instructions
 

  • Preheat the oven to 425
  • Combine all dry ingredients in a large bowl. Mix all ingredients together.
  • Mix the eggs, sugar and milk together in a separate bowl until they are pale yellow.
  • Add the oil, butter, milk, and vanilla extract to the egg/sugar bowl.
  • Combine the dry ingredients with the wet. Once everything is well combined, fold in the chocolate chips.
  • Fill the muffin molds with the batter in a greased muffin pan.
  • To give muffins a bit more texture, you can sprinkle some turbinado/raw Sugar on top.
  • Bake for 8 minutes at 425, then reduce to 350 for 15-20 minutes. Once the tops are puffy and golden brown, bake another 15-20 minutes.
