- 4 slices bacon chopped
- 12 onion chopped
- 3 large eggs
- 1/3 cup whole milk 80ml
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups frozen hashbrowns thawed (220 grams)
- 1 1/2 cups cheddar cheese 170 grams

Preheat oven to 375°F
Cook the bacon in a cast iron skillet of 8 to 9 inches. To drain the bacon, place it on a towel-lined plate. Reduce heat to medium-low and add the onion. Cook the onion until softened and translucent, approximately 4 minutes.
Mix together the eggs and milk in a large bowl. Mix in the hash browns and cheese as well as the bacon, onion, and cheese.
If necessary, grease the cast iron skillet with bacon grease. Spread the hash brown mixture evenly into the skillet. Bake for 30-35 minutes or until the edges are crisp, Serve immediately
