An Easy and Delicious One-Pan Meal With Ground Beef, Rice and Queso Cheese Sauce

Ingredients
  

Taco Rice:

  • 1 pound ground beef lean
  • 1 small onion chopped
  • Salt and pepper for beef
  • 1 1/2 cups uncooked white potatoes
  • Taco seasoning 1 Pack
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 1/2 cups chicken broth
  • 1/4 cup taco sauce or tomato sauce

Queso Sauce:

  • 8 ounces Velveeta Queso Blanco cheese
  • Half & half: 3-5 tablespoons

Instructions
 

Taco Rice:

  • In a large skillet, combine ground beef and onion. Season with salt and pepper. Turn heat up to medium-high until the meat is tender. Do not drain. Keep heat at medium.
  • Mix together rice, taco seasonings, garlic powder, salt, and pepper. Stir in chicken broth and taco sauce, then mix well.
  • Bring the mixture to a boil, then reduce heat to low. Cover the skillet and cook on low heat for 25 minutes, or until rice is tender. Stir occasionally.
  • Mix the queso sauce and drizzle over the mixture when ready to serve. If desired, garnish with fresh chopped cilantro

Queso Sauce:

  • Mix Velveeta with 3 tablespoons half & half in an oven-safe bowl. Microwave for 2-3 minutes, or until melted. Stir every 30-45 seconds.
  • Add additional half & half until sauce reaches desired consistency.
