Pineapple Juice Cake

This Pineapple Dream Cake is the most delicious, moist cake you will ever eat! It is made with a pineapple cake mix, and is so easy to make.

Ingredients
  

  • 1 box 15.25 ounces yellow or butter cake mix*. I prefer Betty Crocker and Pillsbury. See my note below.
  • 3/4 cup vegetable oil
  • 3/4 cup pineapple juice
  • 4 large eggs

Glaze:

  • 2 cups powdered sugar
  • 3/4 cup pineapple juice
  • 4 tablespoons unsalted butter

Instructions
 

  • Pre-heat the oven to 325°F. Grease and flour a 10- to 12-cup Bundt Pan.
  • Mix the ingredients in a large bowl with an electric mixer. Mix for 2 minutes. Put the batter in the pan.
  • Bake the cake for about 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. The sides of the cake should be just beginning to separate. While you prepare the glaze, let the cake cool in the pan.
  • Combine the butter, pineapple juice, powdered sugar and butter in a small saucepan. Stir frequently and cook on medium heat until butter is melted.
  • To poke holes into the cake, use a toothpick or a skewer. The warm glaze should be poured over the cake while it's still in its pan. Although it will seem like there is a lot of glaze on the cake, just keep pouring. Let the cake cool for about 15 to 20 minutes or until most of the glaze is absorbed. Then invert it onto a platter.
