Vegetable Soup

- 1/4 cup olive oil
- 1 yellow onion diced
- 2 stalks celery diced
- 2 cloves garlic minced
- 2 teaspoons kosher Salt
- 1/2 teaspoon coarse ground black pepper
- 1 large potato peeled and diced
- 2 carrots sliced
- 1 cup corn
- 1 cup peas
- 1 cup chopped green beans
- 2 vine tomatoes diced
- 4 cups chicken broth
- 2 cups V-8 juice
Heat the olive oil in a large saucepan over medium heat. Once the olive oil has melted, add the celery, onions and garlic to the pot. Cook for 4-5 min or until the garlic is translucent.
Mix in the remaining ingredients. Bring to a boil. Reduce heat to simmer for 30 min.
