Vegetable Soup

This soup is a great way to get your daily recommended intake of vegetables.

Ingredients
  

  • 1/4 cup olive oil
  • 1 yellow onion diced
  • 2 stalks celery diced
  • 2 cloves garlic minced
  • 2 teaspoons kosher Salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 large potato peeled and diced
  • 2 carrots sliced
  • 1 cup corn
  • 1 cup peas
  • 1 cup chopped green beans
  • 2 vine tomatoes diced
  • 4 cups chicken broth
  • 2 cups V-8 juice

Instructions
 

  • Heat the olive oil in a large saucepan over medium heat. Once the olive oil has melted, add the celery, onions and garlic to the pot. Cook for 4-5 min or until the garlic is translucent.
  • Mix in the remaining ingredients. Bring to a boil. Reduce heat to simmer for 30 min.
