CORNBREAD BREAKFAST CASSEROLE

- 2 cups Cornbread roughly chopped does not need to be exact.
- 1 lb. Breakfast sausage browned, and grease drained
- 6 eggs
- 1 1/3 cups milk
- 1 teaspoon salt
- 2 tsp dried mustard optional
- 1/8 teaspoon fresh grated nutmeg optional.
- 2 1/2 cups grated cheese I used Parmesan and sharp white cheddar
- Freshly cracked black pepper
- Optional: Chives
Preheat oven to 350°F
Mix egg, milk and salt with pepper or other seasonings.
Combine crumbled cornbread with cooked sausage and 2 cups grated cheese in a bowl.
Mix egg mixture with dry ingredients. Stir to combine. Bake at 350°F for 20-25 mins or until the cheese is melted.
