Ingredients

small skinless
boneless chicken breasts (about 1 1/2 lbs or 750g) or 2 large chicken breasts, split lengthwise
2
bell peppers
1 red and 1 green, seeded and cut into strips
1
medium onion
minced
1
tsp
cumin powder
1 1/2
tsp
chili powder
1
tsp
garlic powder or minced garlic
2
tsp
paprika
Salt and freshly ground black pepper
to taste

tbsp
vegetable oil
1
cup
shredded mozzarella cheese
or your favorite cheese
Fresh chopped cilantro or parsley
for garnish
Instructions
Preheat oven to 400°F (200°C).
Season the chicken breasts with oil and fajita seasoning. I like to use my hands to distribute the seasoning.
Add sliced bell peppers and onions to the chicken. Add a little more seasoning to the chicken and then top it with some shredded cheese.
Bake the casserole covered in butter for 25-30 minutes.
If desired, serve immediately and garnish with fresh cilantro leaves.
