- 2 lbs ground beef
- 2 packets taco seasoning
- 4 large eggs
- 3/4 cups milk
- 1 1/4 cups biscuit / baking mix
- dash pepper
- 1/2 cup sour cream
- 2 cups chopped lettuce
- 3/4 - 1 cup chopped tomato
- 2 cups shredded cheddar cheese
- olives
Preheat the oven to 400°F
In a large skillet, heat beef until it is no longer pink. Add taco seasoning to the meat, drain it and then prepare as directed on the package.
Place the meat in a 9x13-inch greased pan and let cool.
In a large bowl, beat eggs and milk together. Mix in 12 cup biscuit mix, pepper, and continue mixing until well combined. Bake for 20-25 minutes.
Allow to cool, then add the sour cream.
Add lettuce, tomato, cheese, olives, and other toppings. Enjoy warm!
