Ingredients
  

  • 2 cups all-purpose flour 240g
  • 1 large apple peeled and chopped
  • 1 cup vegetable oil 235 ml
  • 1 cup dark brown sugar 200g
  • 1/2 cup granulated white sugar 100g
  • 1/2 cup chopped walnuts 60g
  • 2 large eggs
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions
 

  • Preheat the oven to 350°F (180°C) and lightly grease a 9-inch (23 cm) round cake pan.
  • In a medium bowl, mix together the eggs and oil. Add the cinnamon, white and brown sugars, and vanilla extract and mix until combined.
  • Add the flour, salt, baking soda, and baking powder, and mix until thoroughly incorporated.
  • Fold in the chopped apples and the nuts and pour the batter into the prepared pan.
  • Bake for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool for 15 minutes before slicing and serving.

Notes

This cake is delicious served warm with a dollop of whipped cream or a scoop of vanilla ice cream.
You can use any type of apple for this recipe, but we recommend using a tart apple like Granny Smith for the best flavor.
If you prefer a sweeter cake, you can use all white sugar instead of the combination of white and brown sugars.
Leftovers can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days.
