Korean Corn Cheese

This Korean Corn Cheese recipe will change the way you look at corn. Combining creamy mayonnaise, melted butter, and gooey mozzarella cheese with the natural sweetness of corn, this dish is a flavor explosion that you won't be able to resist.

Ingredients
  

  • 2 cans 15 oz each corn kernels, drained (850 g)
  • 1/3 cup mayonnaise 80 g
  • 2 teaspoons granulated sugar 8 g
  • 3 tablespoons unsalted butter 42 g
  • 1 cup shredded mozzarella cheese grated (100 g)
  • 1 green onion thinly sliced

Instructions
 

  • Set a cast iron skillet over medium heat and add the corn, butter, mayonnaise, and sugar. Stir continuously until the butter has melted and the mayonnaise and butter have combined. Season with salt and pepper.
  • Once the mixture is bubbling, sprinkle the shredded mozzarella cheese over the top.
  • Place the skillet under the low broiler in the oven and cook until the cheese is golden brown, for about 2-3 minutes.
  • Garnish with thinly sliced green onion and serve hot.

Notes

You can use fresh corn instead of canned if preferred.
Adjust the amount of sugar according to your preference.
If you don't have a cast iron skillet, you can use an oven-safe skillet or transfer the mixture to a baking dish before broiling.
You can also add a sprinkle of red pepper flakes for a spicy kick.
