Ingredients
  

  • 680 grams 1.5 lb boneless chicken breasts (approximately 3 pieces)
  • 1 tsp blackening seasoning
  • 1 large onion thinly sliced
  • 6 strips of bacon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 113 grams 4 oz shredded pepperjack cheese
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Season the chicken breasts with the blackening seasoning, ensuring they are evenly coated. Set them aside.
  • In a skillet, cook the bacon until it becomes crispy. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease.
  • Drain most of the bacon grease from the skillet, leaving about 1 1/2 tbsp to coat the bottom of the skillet. Reserve any excess grease for later use.
  • Add the thinly sliced onion, salt, and black pepper to the skillet. Sauté the onion over medium heat for approximately 10 minutes or until it becomes translucent and caramelized. Transfer the cooked onions to a separate bowl.
  • If needed, add a little more bacon grease or 1 tsp of olive oil to the skillet to ensure the bottom is coated. Place the seasoned chicken breasts in the skillet and cook over medium heat for 8 to 9 minutes per side, or until they are thoroughly cooked.
  • Once the chicken is cooked, top each breast with the caramelized onions and crumbled bacon. Sprinkle the shredded pepperjack cheese evenly over the chicken breasts.
  • Place the skillet under the broiler for approximately 2 minutes, or until the cheese is melted and bubbly. If your skillet is not oven-safe, transfer the chicken breasts to a baking pan before placing them under the broiler.
  • Garnish the loaded blackened chicken with freshly chopped parsley. Serve the dish warm and enjoy the explosion of flavors!
