Method
Taco Rice:
- In a large skillet, combine ground beef and onion. Season with salt and pepper. Turn heat up to medium-high until the meat is tender. Do not drain. Keep heat at medium.
- Mix together rice, taco seasonings, garlic powder, salt, and pepper. Stir in chicken broth and taco sauce, then mix well.
- Bring the mixture to a boil, then reduce heat to low. Cover the skillet and cook on low heat for 25 minutes, or until rice is tender. Stir occasionally.
- Mix the queso sauce and drizzle over the mixture when ready to serve. If desired, garnish with fresh chopped cilantro
Queso Sauce:
- Mix Velveeta with 3 tablespoons half & half in an oven-safe bowl. Microwave for 2-3 minutes, or until melted. Stir every 30-45 seconds.
- Add additional half & half until sauce reaches desired consistency.
