Ingredients
  

  • 2 avocados
  • 5 hardboiled eggs
  • 2 tbsp. plain yogurt
  • 1 tbsp. lemon juice
  • 2 tbsp. chopped chives
  • 1 tsp. mustard
  • 1/4 tsp. salt or to taste
  • 1/4 tsp. pepper or to taste

Method
 

  1. Split each avocado in half. Next, use your knife and a paring knife to cut the flesh in a crosshatch design. Scoop the skin with a fork into a medium-sized pot.
  2. With a fork, smash the avocados. You can leave some pieces behind. Add the yogurt, mustard (or lemon juice), chives, salt and salt to the avocado mixture. Mix thoroughly.
  3. Cut the hard-boiled egg into small pieces. Then, stir them into your avocado mash. Mix everything together.
  4. Serve immediately
  5. Toast the bread, add your greens and vegetables and you can make the salad into a sandwich. A great choice is spinach, lettuce and tomatoes. Spread avocado egg salad on the toasted bread.
