- Preheat oven to 375 Lightly grease an large baking pan and place aside.
- Place potato wedges in a large container. Mix olive oil with the potato wedges and toss until coated. In a small bowl, combine salt, garlic powder, Italian seasoning, and olive oil. Mix the shredded cheese with the potato wedges. Toss to coat. Finally, sprinkle the seasoning mix on top.
- Place potato wedges on a prepared baking sheet, skin-side-down. Bake for 25-35 mins until potatoes are golden and tender. Serve with freshly chopped parsley, and dressing for dip.
