- Preheat oven to 375°F
- Cook the bacon in a cast iron skillet of 8 to 9 inches. To drain the bacon, place it on a towel-lined plate. Reduce heat to medium-low and add the onion. Cook the onion until softened and translucent, approximately 4 minutes.
- Mix together the eggs and milk in a large bowl. Mix in the hash browns and cheese as well as the bacon, onion, and cheese.
- If necessary, grease the cast iron skillet with bacon grease. Spread the hash brown mixture evenly into the skillet. Bake for 30-35 minutes or until the edges are crisp, Serve immediately
