Chicken and potatoes with dijon cream sauce

Ingredients
  

  • Three medium-sized boneless skinless chicken breasts
  • 2 teaspoons Italian seasoning OR Herbs de Provence
  • Salt and pepper to your liking
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Half a pound of baby potatoes cut in quarters or halved according to your needs (no more than 1 inch pieces).
  • For the dijon cream sauce
  • 1 tablespoon butter
  • 1 teaspoon minced garlic
  • 1 cup chicken broth I used low sodium
  • 2 tablespoons dijon mustard
  • 1 cup heavy cream
  • 1/2 teaspoon salt or to your taste
  • 1/4 teaspoon crushed black pepper or to your taste

Method
 

  1. Preheat oven to 375°F
  2. Make sure to prepare the potatoes and chicken
  3. In a large bowl, combine potatoes and chicken. Toss the chicken and potatoes in a large bowl with 1 tablespoon of olive oil. Season generously with salt, pepper, and the Italian seasoning mix (or Herbs de Provence).
  4. Melt butter in a large skillet on medium heat. Add 1 tablespoon olive oil to the butter and stir it well.
  5. Place the chicken in one half of your pan. Add the potatoes to the second half. Cook the chicken for 3-4 mins, then flip it and continue cooking until golden brown on both sides. Place the potatoes and chicken on a plate. Cover to keep warm.
  6. Make the sauce
  7. Melt butter in the same skillet over medium heat. Stir in garlic for 1 minute til fragrant.
  8. Mix in chicken broth, dijon mustard, and then add heavy cream, salt, and pepper.
  9. Combine it
  10. To prevent them from drying out in an oven, return the chicken and potatoes to their pans.
  11. Bake for 15-20 minutes in a preheated oven until the chicken is done and the potatoes are tender.
  12. Serve the potatoes and chicken with dijon sauce. Garnish the dish with fresh herbs and cracked black pepper if you like.
