Ingredients
  

  • 1 1/4 cups packed brown sugar 250g
  • 3/4 cup old-fashioned rolled oats 75g
  • 3/4 cup milk 180ml
  • 1/2 cup sugar 100g
  • 3 large eggs beaten
  • 3 tablespoons unsalted butter at room temperature (42g)
  • 1 1/2 teaspoons vanilla extract 7.5ml
  • 1/4 teaspoon salt 1.5g
  • 1 unbaked pie shell

Method
 

  1. Preheat the oven to 350°F (180°C) and line a pie dish with unbaked pie crust.
  2. In a large mixing bowl, stir together the brown sugar, oats, sugar, and salt.
  3. Add in the milk, beaten eggs, butter, and vanilla extract. Mix well until fully combined.
  4. Pour the mixture into the pie shell.
  5. Bake for 45-50 minutes, or until the pie is fully cooked through.
  6. Remove from the oven and let cool for 10-15 minutes before serving.
  7. Top with a scoop of vanilla ice cream or whipped cream, if desired.

Notes

For a gluten-free option, simply use a gluten-free pie crust. If you want to make this recipe even more decadent, try adding a handful of chopped pecans to the filling before baking. And don't forget to serve with a big scoop of vanilla ice cream on top for the ultimate indulgence. Enjoy!
