A large nonstick skillet or cast iron deep pan can be placed on medium heat. Cook bacon pieces in a single layer. Cook in batches if necessary. Once the pan is done, take it out and place on a plate.
You can discard the grease and leave 2-3 tablespoons.
Cook the onion slices for 2-3 minutes until they are soft.
Mix the chopped cabbage with salt, pepper, oregano and smoked paprika. Cook for 15 minutes, stirring occasionally, until the cabbage is tender but not too crispy. Mix well and then taste. If necessary, reduce heat to medium-low and cover the pan. Continue cooking for about 10 minutes until cabbage is tender.
Cook the cabbage for an additional 3-4 minutes.
Serve immediately and garnish with chopped green onion if desired.
