Method
- Preheat the oven to 350°F (180°C) and lightly grease a 9-inch (23 cm) round cake pan.
- In a medium bowl, mix together the eggs and oil. Add the cinnamon, white and brown sugars, and vanilla extract and mix until combined.
- Add the flour, salt, baking soda, and baking powder, and mix until thoroughly incorporated.
- Fold in the chopped apples and the nuts and pour the batter into the prepared pan.
- Bake for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool for 15 minutes before slicing and serving.
Notes
This cake is delicious served warm with a dollop of whipped cream or a scoop of vanilla ice cream.
You can use any type of apple for this recipe, but we recommend using a tart apple like Granny Smith for the best flavor.
If you prefer a sweeter cake, you can use all white sugar instead of the combination of white and brown sugars.
