Preheat your oven to 450ºF (232ºC) and spray the cups of a muffin pan with cooking spray.
For a mini-sized muffin pan, place 2-3 tater tots in each muffin cup. For a regular-sized muffin pan, place 4-5 tater tots in each muffin cup.
Put the muffin pan with the tater tots on the bottom rack of the oven and bake for 10 minutes. Remove the pan from the oven.
Spray the bottom of a shot glass or small juice glass with cooking spray. Use it in a twisting motion to press the tater tots in each muffin cup, creating a potato cup shape. Return the pan to the oven and bake for an additional 15 minutes or until the tater tots are deep golden brown.
Add 1 tablespoon of shredded cheese to each potato cup. Bake for another 4-5 minutes, or until the cheese has melted.
Transfer the loaded tater tot cups to a platter and let them cool for 5 minutes.
Top each tater tot cup with a dollop of sour cream, some crumbled bacon, and sliced green onions. Feel free to add any additional garnishes or toppings of your choice.
Serve the Loaded Tater Tots Appetizer warm and watch them disappear!
