Ingredients
  

  • 14 oz. can diced tomatoes with Italian herb
  • 3/4 cup tomato pasta sauce
  • 3/4 cup evaporated milk
  • 2 tablespoons cornstarch
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 4 breasts of boneless skinless chicken
  • 2 tablespoons chopped finely fresh basil

Method
 

  1. In a slow cooker of 3-6 quarts, add tomatoes and pasta sauce.
  2. Add cream, corn starch, and milk to the slow cooker. Add garlic, salt, basil, and pepper to the slow cooker.
  3. Place the chicken breasts in a bowl and mix with the sauce.
  4. Cook the meat on low for about 3-5 hours or until it reaches 165°F. A larger slow cooker will cook quicker.
  5. Mix in fresh basil. Serve over pasta, rice, or with salad and vegetables!
