SMOTHERED CHICKEN AND HOMEMADE GRAVY

With this smothered chicken and homemade gravy recipe, you can enjoy the comfort of a classic dish without having to spend too much time in the kitchen.

Ingredients
  

  • 4 chicken breasts or other parts of your choosing
  • 1/2 cup flour
  • 2 T cajun spice
  • 1 tsp onion Powder
  • 1 tsp mince garlic powder
  • 1 T chopped italian Parsley
  • 2 T olive oil
  • 2 T butter
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 onion sliced.
  • 1 bell pepper sliced.

Method
 

  1. Season chicken with spice
  2. Add 1/3 of flour to it
  3. Brown the chicken on both sides in a skillet of oil. This will take approximately 4 minutes.
  4. Place chicken in a separate bowl and let it rest.
  5. Toss in vegetables and sautee until tender.
  6. Allow the butter to melt.
  7. Stir in the remaining flour. Continue stirring for around 2 minutes or until the flour begins to brown.
  8. Add the broth, milk and whisk together
  9. Stir the mixture until it begins to thicken
  10. Then, return the chicken to the pan.
  11. Cover and let cook for between 20-25 minutes or till chicken is cooked.
  12. Serve over rice or potatoes
