White chicken chili crockpot recipe!

This crockpot white chicken chili is the perfect easy weeknight meal! It's packed with flavor and only takes a few minutes to prep. Plus, it's a great way to use up leftover chicken.

Ingredients
  

  • 1 lb. Chicken Breast
  • 1 White Onion Dice
  • 2 cans White Northern Beans
  • 1 can Whole Kernel Corn
  • 1 10 oz. 1 10 oz.
  • 1 tsp. Garlic Powder
  • 1 tsp. 1 tsp. Salt
  • 1 tsp. Black Pepper
  • 1 tsp. Cumin
  • 1 tsp. Chili Powder
  • 1/2 tsp. Cayenne Pepper
  • 1 - 32 oz. Chicken Broth in a container
  • 1 8 oz. 1 8 oz.
  • 1/4 Cup Half and Half or Heavy Cream
  • Topping Ideas: Cheese Avocado, Fresh Cilantro, Sour Cream, Salsa, & Tortilla Chips

Method
 

  1. In a Bowl combine Salt, Pepper, Cumin, Chili Powder, Cayenne Pepper, Garlic Powder & Stir
  2. Place chicken breasts in the bottom of your slow cooker
  3. Sprinkle seasonings on the chicken
  4. Drain the Beans and Corn
  5. Add Onion, Drained Beans and Drained Corn to the top.
  6. The entire chicken broth can be added to the slow cooker
  7. Cover and cook on low for 6-8 hrs (until chicken is tender).
  8. Take out the chicken and shred it with forks
  9. Return chicken to slow cooker
  10. You can also add cream cheese and half & half
  11. Cook for another 15 minutes at High. Serve with your favorite toppings
